Loaded Queso Dip

Loaded Queso Dip

A delicious twist on everybody's favorite chip accompaniment - queso! And, it's easy to customize to your personal spicy-level.

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 jalapeno, minced
  • 12 oz Wohlt American Cheese, shredded
  • 4 oz Blaser's Hot Pepper Jack Cheese, shredded
  • 1 cup milk
  • 1 dash salt
  • 1 dash black pepper
  • 1 medium tomato, diced
  • 4 oz canned green chiles (mild or hot, per your personal taste)
  • 1/4 cup freshly chopped cilantro, optional
  • tortilla chips for serving

Method
 

  1. In a large saucepan, over medium heat, heat oil. Add onion and cook until soft, 5 minutes.
  2. Add garlic and jalapeno and cook for 1 additional minute, or until fragrant.
  3. Add cheeses and milk and stir until cheese is melted.
  4. Stir in tomatoes, green chiles, and cilantro. Season with salt and pepper.
  5. Transfer to a small crockpot to keep warm. Serve with chips.
